This slow fermentation gently stresses the leaves, transforming primary catechins into secondary polyphenolic compounds, including thearubigins and theaflavins, which enrich flavor, aroma, and support gentle digestive comfort. Gentle dehydration at 70 °C completes stabilization, preserving the delicate profile of this artisanal tea.

The infusion produces a rich amber-yellow liquor with layered floral aromatics, bright citrus accents, and a warm woody finish. This artisanal fermentation produces a polyphenol content of 16–19%, catechins 3–5% per dry weight, and an antioxidant activity of 290.38 μmol Fe²⁺ equivalents/g.
